Matcha has gone from a niche tea to one of the most-ordered drinks at our counter, and for good reason. It is vibrant, smooth and gives you a calm, steady lift. If you have been curious but never ordered one, this guide covers everything you need to know.
What is matcha?
Matcha is green tea from Japan, but it is made differently from the tea in a regular tea bag. The tea plants are shaded for several weeks before harvest, which deepens their green colour and brings out a sweeter, savoury flavour. The leaves are then steamed, dried, stripped of stems and veins, and stone-ground into a fine powder.
The big difference: with normal green tea you steep the leaves and throw them away. With matcha you whisk the powder into water or milk and drink the whole leaf.
What does it taste like?
Good matcha tastes fresh, grassy and slightly sweet, with a savoury “umami” note. It should not be harsh or very bitter. When it is mixed with milk, it becomes creamy and mellow, which is why a matcha latte is the perfect first order.
Ceremonial vs culinary grade
- Ceremonial grade is made from the youngest, most tender leaves. It is bright green, smooth and meant to be enjoyed on its own or in a latte.
- Culinary grade is stronger and more bitter. It is designed for baking, desserts and cooking, where other flavours balance it out.
Does matcha have caffeine?
Yes. Matcha contains caffeine, usually less than a strong espresso-based coffee, depending on how much powder is used. It also contains L-theanine, a natural compound found in tea leaves that many people say makes the energy feel smoother and more focused, without the sudden “crash.”
How matcha is prepared
Matcha powder is sifted, then whisked with hot (not boiling) water until it is smooth and slightly frothy. Water that is too hot can make it taste bitter. For a latte, the whisked matcha is combined with steamed milk for a hot drink, or poured over cold milk and ice for an iced version.
